Rhubarb
Rhubarb is a great addition to the home vegetable garden. It is a perennial plant which will continue to produce year after year. It is also quite attractive, with large leaves and reddish hued stems.
Plants should be spaced 3 feet apart in well amended soil. Rhubarb is best not disturbed once established, so amending the soil initially is important.
The stalks should not be harvested the first year, in order to allow the plant the chance to develop a strong root system. Harvest lightly the second year and then freely in subsequent years. Stalks can either be cut at the ground level or simply pulled out of the ground. Remember that only the stalks are edible; the leaves and roots are poisonous. The delicious tart taste of rhubarb is often combined with fruits, such as strawberries, in pies and sauces.
In the Garden Shop we have both 'Victoria' and 'Canadian Red' rhubarb starts available. 'Victoria' is a common variety with huge, attractive leaves and thick green stalks that are reddish towards the base. The 'Canadian Red 'variety has cherry red stalks, which keep their color when cooked.
Tuberous Begonias
A long time garden favorite, the tuberous begonia is relatively easy to grow and available in a wide variety of vibrant colors. Hanging basket varieties have smaller, more profuse blooms, while the upright varieties have larger flowers. Begonias like partial shade and will bloom all summer.
Plant begonia tubers in well-draining soil in hanging baskets, pots or in the ground, once the danger of frost is past. Begonia tubers require shallow planting, not more than one-half to one inch deep. Make sure that the concave side is facing up and, to avoid rot, tilt the tuber slightly so that water does not accumulate in the bowl-shaped depression. Begonias perform best with good air circulation; the recommended spacing is usually at least 12 inches apart. Water deeply when first planted, but once established allow the begonias to dry out slightly between waterings, as they are more drought tolerant than they appear. Feed with a balanced fertilizer throughout the growing season to ensure a long period of healthy blooms.

Leucospermum is a South African shrub related to Protea. Like proteas, these shrubs are difficult to grow, but well worth the effort with spectacular flower clusters. They can be grown in containers and make exceptional focal points. Also, they make great cut flowers that last a long time in the vase. You want to fertilize lightly with nitrogen and avoid fertilizers with phosphorus. Follow up with a conditioner to make the soil acidic. Give moderate water, once established 2-4 weeks, and they love full sun. They are hardy to around 25 –27 degrees. Protect from frost as needed.

| What You'll Need:
- 1/2 cup unsalted butter, softened
- 1 1/2 cups sugar
- 2 eggs
- 2 tablespoons cocoa powder
- 2 ounces red food coloring
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 2 ounces water
- 1 teaspoon white vinegar
- 1 teaspoon baking soda
Cream Cheese Frosting:
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
Step by Step:
- Preheat the oven to 350 degrees. Grease 12 cupcake cups or line with paper liners.
- Cream butter and sugar until fluffy.
- Add eggs and blend well.
- Make a paste of cocoa and food coloring and add to the butter mixture.
- Sift flour and salt together into this mixture.
- One at a time, add the following ingredients: buttermilk, vanilla, and water.
- In a small bowl, combine the vinegar and the baking soda. Fold it into the cake batter. Make sure it's incorporated, but don't beat it.
- Pour the batter into the cupcake cups. Bake for 15 to 20 minutes, until the cake springs back when touched.
- Remove from oven and let cool for about 10 minutes, then turn out of pan and onto a rack to finish cooling completely.
Cream Cheese Frosting:
- Blend together the following: 1 (8-ounce) package cream cheese, softened, 1/2 cup unsalted butter, softened, 1-1/2 cups powdered sugar, and 1 teaspoon vanilla extract. Blend until smooth.
